Wha?! I can cook!

You heard me right! Finally, I can cook!
I stumbled upon this here site, skinnytaste, and every single thing I've tried has turned out fantastic!
My favorite recipe so far is the chicken nuggets.
note: Panko is Japanese style breadcrumbs

Healthy Baked Chicken Nuggets

16 oz (2 large) skinless boneless chicken breasts, cut into even bit sized pieces
salt and pepper to taste
2 tbsp olive oil
6 tbsp whole wheat Italian seasoned breadcrumbs
2 tbsp panko 
2 tbsp grated Parmesan cheese
olive oil spray 

Preheat oven to 425°. Spray a baking sheet with olive oil spray.
Put the olive oil in one bowl and the breadcrumbs, panko and Parmesan cheese in another.
Season chicken with salt and pepper, then put in the bowl with the olive oil and mix well so the olive oil evenly coats all of the chicken.
Put a few chunks of chicken at a time into the breadcrumb mixture to coat, then on the baking sheet. Lightly spray the top with olive oil spray then bake 8 - 10 minutes. Turn over then cook another 4 - 5 minutes or until cooked though.


Seriously it was SO easy, fast, and delicious! You must try them.


In other news, Jordis loves ice cream! 
No big surprise there since mom and dad do too. 
Apparently, I wasn't feeding her fast enough since she started eating it right off my plate.

Playlist Fun

Look Who's Gettin' Married!

Dallin and Sam  are getting married in May! We just love Sam and are super excited to have her in our family. In other news... Jordis is 8 months old... ... and she has us laughing everyday! Our Everyday Life: Weeks 15-21

Where do I begin?! A lot has happened in the few short weeks that I haven't blogged. We unexpectedly moved back to Utah! Not only Utah, but our old hometown. **** Before we moved back to Utah, we visited family in Utah for Thanksgiving. Creating hand turkeys with Mema for thanksgiving. Jordis was quite positive that we couldn't see her. Barber Family Photo! I think he's pretty handsome... Boy band shot. All the grand kids.  We made candy sleds to race at GG's house with some of Jordis' cousins.  ****    We frequently head to the Harley store as a form of entertainment. Jordis could ride on this rocking  Harley all day. Notice that she HAS to wear gloves while riding. We had one last get together with some of our really good friends in Twin before we left.
